This is already possible. Check the labels field in general setting of the project

It would be nice to add tags to project and be able to filter projects based on them (and possibly sort by them).
One use case would be "archiving" projects - they would still be accessible but could be hidden from project list by default (or listed at the end). I think tags would be better here as more generic instead of direct option to "archive" project.
